Quick Chicken and coconut cream curry

Nothing beats a delicious chicken curry and what better way to have it than with some coconut cream?

 

Ingredients (Makes 4 servings)

2 chicken breasts (chopped)

1/2 can of coconut cream

2 Table spoons Tikka Paste

2 Table Spoons tomato paste

1 teaspoon salt

1 teaspoon ground black pepper

2 Table spoons coconut oil

2 Cups chopped spinach

1 Chopped red onion

1 Tablespoon garlic (You may add more or less depending on your love for garlic)

1 Tablespoon ground ginger

 

Method (Cooking time: 40 min)

Fry the chicken in some coconut oil until slightly brown over medium heat. Add the chopped onion, spinach, garlic, ginger, chilli flakes and tikka paste. Fry until the onions are translucent.

Add the coconut cream and tomato paste and lower the heat. Add salt and pepper. Cover the pot and let it simmer for 20 minutes.

Serve with cauliflower wraps/rice for a banting/paleo friendly option OR with basmati rice.
