Creamy Seafood Pasta


Healthy, quick to make and quite delectable: seafood is a favourite among many. This creamy seafood pasta dish can be enjoyed in cold weather if you heat it up and enjoy it with some al dente pasta and crusty garlic ciabatta or simply enjoy it cool on a hot day: trust me, both versions win!

Ingredients: Serves 4

2 pieces of large hake

12 mussels in the shell (cleaned)

2 large squids (cleaned and chopped) or 100g of squid rings

1 large pimento pepper chopped

1 medium onion chopped

2 table spoons moroccan paste

2 tablespoons tomato paste

10 asparagus tips

10 fine green beans

1 tablespoon of garlic

1 teaspoon of ginger

2 chopped green chillies

2 cups of pino grigio

Juice of half a lemon

1 cup of coconut cream

2 cups baby spinach

2 tablespoons of double thick cream (you can omit this for a dairy-free alternative)

1 tablepoon of coconut oil

2 cups of penne pasta


Method: (+/- 20 minutes)

  1. Make the pasta: Boil two cups of pasta in about 1 litre of water with a pinch of salt and teaspoon of olive oil. Once al dente: soft but firm ie. cooked then rinse in a strainer with cold water and set aside.
  2. Make the sauce:

Chop all your vegetables: pimento pepper, asparagus, green beans and onion. Heat your coconut oil over medium heat and fry the vegetables until the onion is translucent.


Add the moroccan paste and tomato paste and mix evenly with the vegetables. Add garlic, ginger and chopped chillies. Mix well.

Add the coconut cream and double thick cream and mix well. Add the wine and lower the heat to a gentle simmer. Add your seafood and baby spinach and simmer for a further 15 minutes. Take care not to overcook, the meat must be soft and not chewy.


Serve with your pasta and a lemon wedge. Enjoy!
