It’s a braai! Marinated Lamb Chops and Crushed Potato Salad

Nothing makes a good braai (BBQ) like deliciously marinated succulent meat and good side dishes (not that one you are thinking about)!

Marinated lamb chops

Ingredients: 

4 lamb chops

balsamic vinegar

honey glaze

salt

pepper

rosemary

Method(24 hours)

Cover each side of the lamb chop with 1 Tsp balsami vinegar, 1Tsp honey glaze, salt and pepper. Put the lamb chops in a dish and cover with the rosemary. Cover the dish and allow to marinate over night in the fridge. Your chops are now ready for the fire!

Crushed potato salad

Ingredients (serves 4)

3 large potatoes

25g butter

0.5 cup of full cream milk

1/2 tsp salt

1/2 tsp crushed black pepper

1 grated baby red onion

Chop the potatoes into quarter and place in a pot. Fill the pot so that the water is halfway level with the potatoes. Boil on medium heat and add small amounts of water as water runs out. I try to add small amounts of water each time so as not to ‘drown’ my potatoes ie. half a cup for each large potato.

Once cooked, lightly mash the potatoes with a fork so that they are mashed but slightly chunky (according to your desired consistency). Add the red onion, milk, butter and salt/pepper and mix well. drizzle 2 Tsp of olive oil on top and garnish with a sprig of parsley.
