Ostrich Casserole

Lean in fat and packed with protein, ostrich has gained quite a bit of popularity in the ‘red meat’ scene. It is tender and delicious as a casserole. Serve this with rice, roast veggies or anything you fancy. It will be sure to warm your belly AND your heart.


Ingredients: Serves 4

400g ostrich steak cubes

1 Tsp coconut oil

1 red onion finely chopped

2 medium carrots, washed and sliced into 1cm slices

200g crushed italian tomatoes (about 3/4 cup)

1 tsp ginger

1 Tsp garlic

1 Green chilli chopped finely

1 Handful green beans

1 tsp organic cayenne pepper

1 tsp organic rosemary

1 tsp organic thyme

1 tsp organic basil

1 Tsp tomato paste

1 tsp ground coriander

1 tsp mild curry powder

2 Tsp yeast-free vegetable stock powder

150ml water

Grated parmesan to serve.


Method: Cooking time 1 hour

Heat a medium sized pot on the stove and add the coconut oil. Brown the ostrich cubes and remove from the heat. In the same pot, fry the onion, garlic and ginger. Once the onions are translucent add the coriander powder and curry powder. Stir evenly.

Pre-heat your oven to 150 degrees Celcius.

Add the carrots, green beans, tomato paste and crushed tomatoes. Lower the heat and allow to simmer for 10 minutes. Add the herbs and vegetable stock powder as well as 150ml of water. Mix well.

Pour the contents into a casserole dish and close with the lid. Place in the oven and bake for 45 minutes. Sprinkle with some parmesan and serve.
