Jazz up your chicken with this delicious chicken rub. You can either roast it immediately or marinate overnight to increase the flavour. I grilled it immediately and it tasted wonderful.
1 Whole Free-Range Chicken
5 Chillies finely chopped
1 Tablespoon dry organic thyme
1 Tablespoon dry organic sweet basil
1/2 teaspoon himalayan salt
1 teaspoon ground black pepper
1 teaspoon ground organic cayenne pepper
2 tablespoons tomato paste
3 Tablespoons Organic apple cider vinegar
4 Tablespoons fynbos honey
2 tablespoons butter
Method: 1 Hour
Prepare your chicken by making incisions on the breast, back, thighs. Mix all the ingredients except the honey and the butter. Mix well and then spread on the chicken and stuff into the incisions. Place in a preheated oven and roast for 30 minutes with the breast facing down. Take out of the oven and turn it over. Using a spoon, spread the honey and butter on the chicken and return to the oven for 15 minutes. Take it out again and and spread the honey and butter on the other side. Roast for a further 10 minutes and Grill it till nicely browned. Do not discard the gravy, serve it with the chicken.
