Creamy Baked Spaghetti Squash Recipe with Ricotta and Mushrooms [banting friendly, gluten-free and low-carb]

The cold front has hit us here in South Africa which beckons pizza, pasta and everything sinful. Finally decided to try out my spaghetti squash for the first time and I must say: the results were delectable!

Ingredients: Serves 2-4

Half a medium spaghetti squash

2 Tablespoons butter

Himalayan Salt


2 Tablespoons ricotta

Handful chopped mushrooms

handful chopped cherry tomatoes

100g grated cheddar cheese

Tablespoon sweet basil (dried)

Tablespoon origanum (dried)

Method: 1H20Min (WORTH IT :D)

Place a tablespoon of butter onto your spaghetti squash and sprinkle some salt and pepper. Place on a baking tray and bake for 45 minutes at 180 degrees Celsius.

While waiting for the squash: fry your cherry tomatoes and mushrooms in butter and add the ricotta and herbs.

Take the squash out and allow to cool. Using a fork, Take out the spaghetti strands and place in a bowl. Mix with the cherry tomatoes and mushrooms. then place back into the hollow squash skin. Sprinkle with grated cheese and place under the grill for about 15 minutes.
