How to fry the perfect Fillet Steak [free-range meat, banting, paleo]

Frying the perfect steak, especially fillet steak is a mission. I usually slice my fillet steak into 1cm thickness and fry it as is but that’s boring, so I tried this method for a 500g fillet and the results were beautiful: perfect for a dinner setting. I used kudu steak which has less fat than beef.

Ingredients (serves 4+)

500g fillet steak

2 table spoons crushed himalayan salt

2 Table spoons crushed black pepper

4 Tablespoons cayenne pepper

4 table spoons Extra-Virgin Olive oil

4 Table spoons unsalted butter/coconut oil for frying

Method: 30 Minutes

Take your fillet steak and sprinkle the salt, pepper and cayenne pepper on it. Rub it in with your hands. Sprinkle the olive oil and let it sit.

Heat a pan over medium to hot setting on the stove. Put in 2 Tablespoons of butter or coconut oil then add your fillet steak. Once the one side is browned, turn it around and fry the other side – add the rest of the butter. Once nicely browned – reduce the heat to a medium setting. Cover the pan with a lid and leave to cook for 10 Minutes. This will give you a medium rare result. To cook it to medium well/well done – cover and cook for 20 Minutes. NB: Take care to turn it every 5 Minutes so that it cooks evenly while covered.
