Creamy Chicken and Butternut Spaghetti Pasta [Paleo, low carb, gluten-free]

You can either buy your butternut/squash already spiralized OR buy a spiralizer and get wild! The butternut provides a tasty alternative to traditional pasta and complements the chicken really well. The taste is out of this world!

Ingredients (Serves 2-4)

500g spirallized squash (butternut/squash/pumpkin)

2 table spoons coconut oil

2 large/4 small chicken breasts: thinly sliced

2 Tablespoons crushed garlic

1 Tablespoon crushed ginger

1 Chopped Onion

2 Large tomatoes: grated OR 1/2 cup of crushed tomatoes

150ml fresh cream or 150ml coconut cream

Salt

Pepper

Handful chopped Parsley OR 2 Tablespoons dried parsley

2 teaspoons nutmeg

100g grated cheddar cheese (optional)

Method: 45 Minutes

Heat a pan over medium heat and add the chopped onion. Once translucent, add the chicken, garlic, ginger, nutmeg, salt and pepper. Fry until the chicken is white. Then add the cheese, crushed/grated tomatoes and cream Lower the heat and reduce it for 15 Minutes until slightly thick. Add the butternut and herbs and cook for a further 15 Minutes.
