Easy Tapas

Finger foods are the best! They’re easy, yummy and allow for easy banter by the BBQ/Braai. This tapas is easy to do and is pretty quick!

Serves 2-4.

Hummus:

Ingredients:

300g drained cooked chickpeas

50ml iced water

3 Tsp olive oil

1 tsp crushed garlic

1 pinch of salt

Method:

Place all ingredients in a blender and whizz! Transfer to a small bowl and drizzle some olive oil for serving.

Spicy chicken livers:

Ingredients:

150g chicken livers

1 tsp masala

1 tsp crushed garlic

1 tsp organic thyme

1 tsp sweet basil

1 tsp organic parsley

1 pinch of salt

1/2 tsp crushed black pepper

1 Tsp coconut oil

1/2 chopped medium onion

1 tsp crushed or chopped chillies

Method:

Heat a wide pan over medium heat, fry the onion until translucent. Add the garlic. Add the chicken livers and masala and fry until the livers are browned. Add the herbs, chillies, salt to taste and some black pepper. Stir evenly. Add about 50ml water. Mix thoroughly and allow to simmer for 3 minutes. Transfer to a small bowl for serving.

Serve with some chopped figs, grilled halloumi, warm mini pita breads, olives and chopped cheddar cheese.

Pop the champagne and enjoy!
